Gluten-free lactose-free stuffed chocolates

I found two nice links on gluten-free stuffed chocolates and decided to make them for Hussein.

 Lemon Fondant Chocolates

A little time-consuming, but they turned out great…

I used Swifax Kitchen Chocolate for the coating and tried different stuffings, like caramel, shredded coconut with coconut cream and sugar, different juices with homemade caster sugar..

Delicious Butterfly Shrimps at Home

I have made this recipe tens of times and always with great results Alhamdulillah. It’s easy, delicious and looks professional, too..

First of all, you have to ask where you buy the shrimps to let the guy open the back of the shrimps and clean them, this saves you lots of time and energy. then you just press each shrimp between your hands to make the butterfly shape and to have a big opening for the stuffing.

Stuffing ingredients:

the most important ingredients here are: butter(use a lot), dill, garlic, lemon and salt

the optional ingredients are: celery, tomatoes, onions, buttermilk(for more thick stuffing), shredded carrots and curcum (for more orange color), seasoning, cumin

you just blend all the ingredients together well until you have something that has the texture of cake batter. Then you take from this mixture spoonfulls and stuff the butterfly shrimps with them. After you let them sit you can use the oven or an electric grill which has a cover. Just around 10 minutes and everything will be ready so try to do this when you’re ready to serve.  If you use the oven, put them covered first for a while and then remove the aluminum foil for another while. If you use the electric grill, put them on the highest setting to keep the juices. It would be great if you can then pour all the juices collected in the grill onto the hot, ready to serve shrimps at the end. And enjoyyyyyyy!!! Yummy!

Rice & Lentil Tortillas

I found a recipe for these gluten free tortillas and gave them a try, they make really great tortillas which are easy to work with to make tortilla wraps.

Ingredients:

11/2 cup rice

1/2 cup yellow lentils

water and salt

oil (optional)

egg (optional)

cumin (optional – and also good to improve digestion of lentils)

“Combine the lentils and rice in a large bowl. Rinse them, then cover with water and let soak overnight. In the morning, drain the soaking water, reserving a little bit for grinding. Grind the mixture to a paste in batches in a blender or food processor, adding enough of the soaking water to make a grainy paste. The goal is to have the paste be as smooth as possible, but it will be a little grainy (at least mine is) – this is okay.

Next, heat a non-stick skillet . When the oil is hot, ladle some batter into the skillet and swirl it into a thin pancake with the back of a spoon.
Cook until bubbly on top and golden brown on the bottom. Flip and cook until golden on the other side. Remove from the pan and repeat. “
When I remove my tortillas from the heat I place them into bread bags which I bought through facebook which keep bread fresh, this also makes them moist and easy to work with later, as I read on one of the gluten free blogs…
The first time I made those I made my own mayonnaise which was really easy and also some homemade shawarma for the stuffing.

After wrapping, to make them crispy, use the sandwich grill to squeeze them.


After that, you can cut them by half and store them in airtight containers in the freezer ready to microwave :). So you can have lots of ready gluten-free sandwiches for your kids’ lunchboxes (or yours)..

Hussein’s Gluten-free Jungle-Theme Third Birthday Party

The Idea..

About two months ago Hussein turned three. His birthday this time was so special in many aspects.First, for the first time everything had to be gluten-free. I wanted to let him choose freely what to eat without asking me if it is allowed 0r not, which takes the fun away.. Second, I decided to have a theme for the birthday party, and it was a JUNGLE PARTY, because of his growing interest in animals ! Hussein was the king of the jungle, the lion. All other family members had to choose a jungle animal mask. It was lots of fun.

The plan..

I started planning everything about a week before the party, and it was lots of work. The decoration, the masks, the plates, the gluten-free recipes and the garnishing. I made a big plan. It was like a project consisting of several smaller projects. I had milestones, some things could be finished early like cookie dough, fondant, buttercream, pizzas, most decorations had to be done the day before the party so that Hussein wouldn’t have enough time to ruin everything and some things had to be done on the day of the party like the birthday cake and the garnishing of the cupcakes.

I decided not to buy anything for decoration and to make everything at home.. It was time consuming, but worth the effort..

I printed the letters out, my friend helped cutting them out and we stapled them onto real dried leaves which my grandma had collected..Using wooden laundry clips, I hanged them on a green chrismas garland. It looked so professional yet original.. Here is the link where I printed the letters out.

For this I used some ready stickers as well as printed out pictures and photos

Table..

I used the idea of a felt playmat which I found online to decorate the table.. then I added Hussein’s mini animals to decorate it. I also divided different gluten free mini sweets by color and put each color in a small colored transparent bowls, they looked cute.



Now after the party Hussein plays with it as a playmat, we also cut some felt fishes and animals that he can play with…

decided to decorate my plates into animal faces as well, we decided for the designs and a friend helped make most of the plates..

The recipe:

for the chocolate cake:

dry ingredients:

1 cup cocoa

1/2 cup rice flour

1/2 cup tapioca flour

1/2 cup potato starch or sweet potato powder

2 tsp baking powder

wet ingredients:

4 eggs

2 cups sugar

1/1/2 cup oil (I used heart of sunflower oil)

vanilla

1/2 cup buttermilk

1/2 cup water

chocolate buttercream recipe:

1/4 cup shortening (I used natural ghee)

1 tsp vanilla

2-3 Tbsp juice

2 cups caster sugar

cocoa to color and taste

for the decoration:

gluten free marchmallows

Hershey’s chocolate chips

yupi jelly

shredded cooking chocolate (or you can use coconut and color it in a plastic bag)

The cup cakes

cup cake recipe:

ingredients:

2 cups sugar

1 cup butter

vanilla

2 tsp. gf baking powder

1 cup coconut milk

2 cups white rice flour

2/3 cup potato starch

1/3 cup tapioca starch

2 tsp gelatin powder

recipe: 

Gradually add flour blend alternating with milk to butter mixture at low speed until well blended

easiest fondant recipe: (I think I doubled this recipe..)

4 cups white gluten  free mini marshmallows

4 cups powdered sugar

2 Tbsp water

food coloring

instructions

put marshmallows and water in microwave-safe bowel and put into microwave for 1 minute, then stir, then microwave again for 30 seconds if still not melted –> stir in sifted powdered sugar –> dust area and hands with powdered sugar –> form into balls –> form each ball into a disc –> put color in the center –> fold into ball around color –> knead

Mini Pizzas

I decorated my mini pizzas into smiling faces..


pizza crust recipe

ingredients

1 Tbsp flaxmeal + 2 Tbssp of boiling water and whisk

125 g of each: millet flour, potato starch, tapioca flour (I used bob’s red mill All purpose because I was out of tapioca), brown rice flour

1/1/2 tsp salt

4 tsp active dry yeast

1/4 cup sunflower oil or 50 g butter

1/2 cup warm water

1 tsp vinegar

2 eggs

1/2 cup butter milk

2 tsp sugar

olive oil for brushing

instructions

knead –> let rise for 1 hour –> brush with oil –> 220 degrees for 10 minutes –> then add topping (I added topping from the beginning because they were frozen)

for decoration:

I used olives for the eyes, green pepper for the nose and tomatoes for the mouth (and hussein suggested grated carrots for the hair so we added that, too,it looked nice )

Cheese Biscuits

Although I had collected tons of animal shapes for the cookies, I ended up sticking to three shapes because they were easier to deal with: the letter H (for Hussein), the number 3 (for his third birthday) and the bear shape.

biscuits recipe:

400 g gf Bob’s Red Mill All Purpose flour

250 g butter

350 g Cheddar Cheese

2 eggs

(of course I had the dough ready in the freezer– then I baked them the day before the party and heated them before the party again)

Caviar Canappe

For the base of the canappe I used the Egyptian Pro-free gluten free All Purpose flour and followed the package instructions, then I cut the toase into small circles, topped them with AHF mayonnaise and then with red and black caviar

Rice Meat Fingers with tomato dipping sauce

Recipe (as I can remember, I didn’t stick to a recipe):

(Here, too, I had prepared them beforehand and put them in the fridge ready for frying)

1 kg ground meat
2 eggs
2/3 cup rice flour
1/3 cup chopped dill
2 tsp parsley
2 finely chopped onions
2 chopped garlic cloves
1 tsp salt

Kebabs

I used strawberries dipped into melted chocolate, cantaloupe,  marchmallows, grapes and canned cherries

I used grilled shrimps, cheddar cheese coated with smoked salmon, olives, (I looked for cherry tomatoes but couldn’t find them), grilled zucchinis

You may have noticed that I wanted all the food to be easy to pick and eat by hand.. we just used the plastic plates, we even didn’t need the cups because we bought mini juices and water bottles.. I wanted everything to be spontaneous and “childish” and, of course, easy to clean up :).

Now, I wish I still have the links where  I collected some ideas and recipes for the party during the brainstorming phase..but I will search for them, and if someone feels I should have referenced his site, pls let me know your link and I will add it as a reference…

The party was great, I had prepared some photos and videos of Hussein as a slideshow on TV and we watched them together, I had also collected some funny youtube Happy Birthday videos for him to watch and dance to and we had fun (Al-Hamdulillah)..

GF Chocolate Cookies

After trying the Chocolate Puddles with great success, I made some modifications and obtained somewhat regular cocolate cookies with good results. Here is the new recipe:

ingredients (for a dozen big coo

kies)

11/2 cups minced walnuts (like what u would use 4 a pie crust)

1/2 cup shredded coconut

1/4 cup cocoa

11/2 cup homemade powdered sugar

pinch of salt

1 whole egg

2 egg whites

1/3 cup tapioca flour

vanilla

 

mix all ingredients well and make small balls then flatten them with ur hand on cookie sheet into big flat circles (6 at a time)—enjoyy

Pumpkin Soup and Red Lentil Soup

Yesterday I made our traditional Egyptian Red Lentil Soup (شوربة عدس) because it goes really well with the bad weather, today I had some pumpkin and decided to try making a pumpkin soup as a change, but it wasn’t really much of a change, it had pretty much the same taste! 🙂 This is maybe because both soups are prepared in the same way.

You can add anything you like but this is what I used:

chopped potatoes, carrots and celery, onion, garlic, chicken stock and butter.

You can add spices and herbs like cumin, coriander, thyme, ginger, cinnamon and/or sage. You can also add fresh cream or milk or browned flour at the end.

For the Red Lentils it’s better to first boil them alone, puree them using an immersing mixer (this is great for directly blending soups when they are still hot in the pot!) and leach the excess skin.

For the pumpkin soup, you just put everything together, boil, cover and reduce heat wait until everything is soft and blend it, it’s so easy.

I wanted everything to be light so I just added the onion, garlic and small piece of butter right into the water and chicken stock with the rest of the ingredients from the beginning.
