http://www.cl.cu.edu.eg/link1/rules_library/rules.php

Facebook apps: http://apps.facebook.com/central_library/?fb_source=search&ref=ts

http://apps.facebook.com/cairo_university/?fb_source=search&ref=ts

Hussein’s Gluten-free Jungle-Theme Third Birthday Party

The Idea..

About two months ago Hussein turned three. His birthday this time was so special in many aspects.First, for the first time everything had to be gluten-free. I wanted to let him choose freely what to eat without asking me if it is allowed 0r not, which takes the fun away.. Second, I decided to have a theme for the birthday party, and it was a JUNGLE PARTY, because of his growing interest in animals ! Hussein was the king of the jungle, the lion. All other family members had to choose a jungle animal mask. It was lots of fun.

The plan..

I started planning everything about a week before the party, and it was lots of work. The decoration, the masks, the plates, the gluten-free recipes and the garnishing. I made a big plan. It was like a project consisting of several smaller projects. I had milestones, some things could be finished early like cookie dough, fondant, buttercream, pizzas, most decorations had to be done the day before the party so that Hussein wouldn’t have enough time to ruin everything and some things had to be done on the day of the party like the birthday cake and the garnishing of the cupcakes.

The outcome..

-The decoration..

I decided not to buy anything for decoration and to make everything at home.. It was time consuming, but worth the effort..

first, the banners..

the Happy Birthday banner

I printed the letters out, my friend helped cutting them out and we stapled them onto real dried leaves which my grandma had collected..Using wooden laundry clips, I hanged them on a green chrismas garland. It looked so professional yet original.. Here is the link where I printed the letters out.

The Jungle Birthday banner..

For this I used some ready stickers as well as printed out pictures and photos

Table..

I used the idea of a felt playmat which I found online to decorate the table.. then I added Hussein’s mini animals to decorate it. I also divided different gluten free mini sweets by color and put each color in a small colored transparent bowls, they looked cute.

Now after the party Hussein plays with it as a playmat, we also cut some felt fishes and animals that he can play with…

Signature table…

I collected all Hussein’s stuffed animals and let them put birthday hats

The balloons …

The trees of the jungle..

-The Masks..

After choosing designs and colors we cut the parts out from felt and sticked them together using the glue gun..

The plates

I had some white plastic plates and colored sticker paper so we
decided to decorate my plates into animal faces as well, we decided for the designs and a friend helped make most of the plates..

And finally to the important part,

the food

first, the lion cake..

The recipe:

for the chocolate cake:

dry ingredients:

1 cup cocoa

1/2 cup rice flour

1/2 cup tapioca flour

1/2 cup potato starch or sweet potato powder

2 tsp baking powder

wet ingredients:

4 eggs

2 cups sugar

1/1/2 cup oil (I used heart of sunflower oil)

vanilla

1/2 cup buttermilk

1/2 cup water

chocolate buttercream recipe:

1/4 cup shortening (I used natural ghee)

1 tsp vanilla

2-3 Tbsp juice

2 cups caster sugar

cocoa to color and taste

for the decoration:

gluten free marchmallows

Hershey’s chocolate chips

yupi jelly

shredded cooking chocolate (or you can use coconut and color it in a plastic bag)

The cup cakes

cup cake recipe:

ingredients:

2 cups sugar

1 cup butter

vanilla

2 tsp. gf baking powder

1 cup coconut milk

2 cups white rice flour

2/3 cup potato starch

1/3 cup tapioca starch

2 tsp gelatin powder

recipe:

Gradually add flour blend alternating with milk to butter mixture at low speed until well blended

easiest fondant recipe: (I think I doubled this recipe..)

4 cups white gluten  free mini marshmallows

4 cups powdered sugar

2 Tbsp water

food coloring

instructions

put marshmallows and water in microwave-safe bowel and put into microwave for 1 minute, then stir, then microwave again for 30 seconds if still not melted –> stir in sifted powdered sugar –> dust area and hands with powdered sugar –> form into balls –> form each ball into a disc –> put color in the center –> fold into ball around color –> knead

Mini Pizzas

I decorated my mini pizzas into smiling faces..

pizza crust recipe

ingredients

1 Tbsp flaxmeal + 2 Tbssp of boiling water and whisk

125 g of each: millet flour, potato starch, tapioca flour (I used bob’s red mill All purpose because I was out of tapioca), brown rice flour

1/1/2 tsp salt

4 tsp active dry yeast

1/4 cup sunflower oil or 50 g butter

1/2 cup warm water

1 tsp vinegar

2 eggs

1/2 cup butter milk

2 tsp sugar

olive oil for brushing

instructions

knead –> let rise for 1 hour –> brush with oil –> 220 degrees for 10 minutes –> then add topping (I added topping from the beginning because they were frozen)

for decoration:

I used olives for the eyes, green pepper for the nose and tomatoes for the mouth (and hussein suggested grated carrots for the hair so we added that, too,it looked nice )

Cheese Biscuits

Although I had collected tons of animal shapes for the cookies, I ended up sticking to three shapes because they were easier to deal with: the letter H (for Hussein), the number 3 (for his third birthday) and the bear shape.

biscuits recipe:

400 g gf Bob’s Red Mill All Purpose flour

250 g butter

350 g Cheddar Cheese

2 eggs

(of course I had the dough ready in the freezer– then I baked them the day before the party and heated them before the party again)

Caviar Canappe

For the base of the canappe I used the Egyptian Pro-free gluten free All Purpose flour and followed the package instructions, then I cut the toase into small circles, topped them with AHF mayonnaise and then with red and black caviar

Rice Meat Fingers with tomato dipping sauce

Recipe (as I can remember, I didn’t stick to a recipe):

(Here, too, I had prepared them beforehand and put them in the fridge ready for frying)

1 kg ground meat
2 eggs
2/3 cup rice flour
1/3 cup chopped dill
2 tsp parsley
2 finely chopped onions
2 chopped garlic cloves
1 tsp salt

Kebabs

Fruit Kebabs

I used strawberries dipped into melted chocolate, cantaloupe,  marchmallows, grapes and canned cherries

shrimp kebabs

I used grilled shrimps, cheddar cheese coated with smoked salmon, olives, (I looked for cherry tomatoes but couldn’t find them), grilled zucchinis

You may have noticed that I wanted all the food to be easy to pick and eat by hand.. we just used the plastic plates, we even didn’t need the cups because we bought mini juices and water bottles.. I wanted everything to be spontaneous and “childish” and, of course, easy to clean up :).

Now, I wish I still have the links where  I collected some ideas and recipes for the party during the brainstorming phase..but I will search for them, and if someone feels I should have referenced his site, pls let me know your link and I will add it as a reference…

The party was great, I had prepared some photos and videos of Hussein as a slideshow on TV and we watched them together, I had also collected some funny youtube Happy Birthday videos for him to watch and dance to and we had fun (Al-Hamdulillah)..

When comes our “Iron Saladin”?

Iron Man - Flying Gameplay Video screenshot 2

I had lots of different thoughts after watching “Iron Man” yesterday. I know I am two years late in doing so but actually I have never been very up-to-date in this area…Anyway, it was a great and special movie, although I usually don’t like super hero movies and I enjoyed watching it with my husband as he likes to end his long tiring work day relaxing in front of the TV (which I am not really fond of, but he needs it!).  Now let’s come to the point: why am I writing a post on this.

Well, usually when I watch a good movie I spend a long time afterwards reflecting on it and this was one such movie. Some scenes were really touching for me because they relate to the real world. The idea itsself is amazing. At some instants I wished I was the Iron Woman saving the world from evil. I would fly to Palestine and …. ahhh, this would be the most wonderful day of my life. Other people are on my mind, too, but let’s say I’ll stick to the basics right now 😀 so that you don’t think I am a violent person or something. lol

It sounds so childish but we always dream that one day Saladin will come and free Palestine! Well, yesterday I realized that the old image of Saladin doesn’t suit our world any more. We need an Iron Saladin. To defeat Israel and free palestine we need technology and we will never be able to compete with our enemy if we still think we need our old Saladin. Nowadays power=technology. Maybe if Japan and China and India and Malaysia and Iran and …….. ally together we can create something useful?? It’s sad to say I am very pessimistic in this regard. Not before 100 years, if ever, can we reach one tenth of our enemy’s strength. We don’t even have the strength of belief that Saladin once had anymore. We need both to succeed, so we need an Iron Saladin.

Do you think this day will ever come?

Being pregnant again

And here we go again… As Hussein is finally starting to do some minor tasks on his own without me taking care of  every tiny step, I am already expecting my second baby. Most people advised us to make it earlier so that we are doing the job “once and for all” but my husband wasn’t even convinced of ever having a second baby. Well, he’s had his bad days, too.. But discovering my pregnancy was a nice surprise for both of us, nonetheless. My husband doesn’t want to have another boy, though. He told me if we get another boy, I will travel to another country and let you take care of your two boys alone. Is he just joking? Who knows! But I am really dying to know the gender of the little shrimp growing inside me. I want to have a girl, too. For two reasons:

First, my husband, who was usually a calm and patient guy, doesn’t stand being with Hussein for more than half an hour without starting a fire. It usually goes like this, Hussein starts misbehaving, M starts yelling and screaming at him, if not hitting him, I start giving him a lecture on properly treating children and how his behavior will affect Hussein’s, we end up fighting together and we achieve nothing. I think it’s because M is this kind of guy who wants everything to be just perfect. And children are of course by no means perfect. I tried to explain this to him but with time I realized that it’s difficult, if not impossible to make him accept my way of dealing with the issue. So now I try to just calm things down. A relative of mine who has a boy and a girl told me that her husband loves to be with the girl and not with the boy. So I am hoping to get a quiet little girl (who is not like me as a child) so that maybe the atmosphere at home will be more relaxed (of course not in the first months after delivery :D).

The second reason is that M decided firmly that this will be our last child (at least for the time being, maybe after like 10 years I will make him change his mind? :D), so this is another reason I would like to have a girl so that I don’t think about having another baby.

So definitely this will be  a life-changing factor for me. Unfortunately I am still at the end of the third month, so I can’t know it right now. I ‘m still waiting. I know that if a doctor doesn’t see a boy, he’ll not definitely say it’s a girl maybe even until delivery, so as long as I am not receiving any information I’m still at the safe side.

They say that if you’re expecting a girl you’ll have more heartburn, nausea, etc. and are more likely to develop acne and skin problems during pregnancy. Well my pregnancy this time is miserable. When I was pregnant back then, I was just a normal human being, active all the time, no bad stomach problems, just a little above normal, and was feeling well all through my pregnancy. This time I’m having all sorts of things, I also get sick often, avoid lots of foods and can’t stand a lot of smells. I am so tired and feeling like feeling I’m sleep-deprived all the time and get lots of headaches. Sometimes my blood pressure is low and I can’t do anything. It’s just a lot different than last time but everybody says this is normal in the first trimester. Well now I am at the end of the first trimester and waiting for some improvement..

Anyway, of course I will accept whatever God choses for me as I will never know what’s better for me. God alone already knows who’s inside me now, how he/she will look like, how his/her character will be and how long he/she will live. He alone knows if I will even live until I see him/her. It’s all in His Hands.

Dealing with people

Sometimes it’s difficult to deal with people, including me.

ActuallyI think  it’s always difficult to deal with people as long as you’re actually “dealing” with them..

This feeling has become much stronger since I became a mother.

After talking with a lot of other mothers and reading comments on forums I found out most mothers feel the same way.  You suddenly feel that everyone around you is searching for something to blame you for. Their tone and looks are telling you: “You are a really bad mother, you should care more for your child” or “you understand nothing about parenting, you should ask me, I’m the expert here”, or sometimes even worse: “Do you want to kill your child?”. Even people on the street you have never met before must make sure that you feel guilt whatever you are doing. I’m not sure if I have exaggerated feelings concerning this, but one such situation may be enough to spoil my whole day. Well by now I’ve started to get used to it but sometimes I really can’t bear it any longer and it may be my Mom or any other close person that suddenly becomes my scapegoat after making some such remarks. For me the problem it’s not the remarks themselves but the way they make them and make sure you receive them. Is it human nature that God make people always feel sorry for young children to keep anyone from hurting them, maybe, but those people out there are overdoing it.

I’m not saying all people are bad. And I am not saying I am good either. The point is it takes a lot of self control and consciousness to be kind to other people all the time, even closest people to you, especially if you are not naturally gifted with patience and/or you already have enough problems and health issues that make you feel irritable. I know that we chose our own feelings and reactions, and that’s why I really would like to improve myself as to be more relaxed when receiving annoying remarks and just trying to consider them as innocent.

I remember here some sayings of Prophet Muhammad, peace and blessings be upon him.

“The strong is not the one who overcomes the people by his strength, but the strong is the one who controls himself while in anger.”

Yeah, this is really a difficult task. And the one who achieves this deserves his reward.

“The believer who mixes with people and patiently bears their annoyance will have a greater reward than the believer who does not mix with people and patiently bear their annoyance.”

Indeed, it is much easier to isolate yourself from people but we are not created to live in isolation.

Please, God, help me become a better person, deal better with people and carry more love in my heart as I go through my everyday life…

Husband’s Surprise Birthday Party

As I had stopped blogging for more than two years now, I will sometimes make some flash-backs on some important events we went through and this was definitely one important one.

Last May I made a surprise party for my husband where I baked everything myself. I wanted to make it special so I shaped lots of treats as hearts and I also made a special heart cake. It was a new and challenging experience for me and the first time I make a birthday cake. Of course, it took me about two weeks to get everything done and I started with things that could be refrigerated without losing quality.  It turned out to be fun and everything looked great and was delicious as well. You might like some ideas and try to apply them yourself.

Here are some photos.

Tota is the daughter of my husband’s sister (I’m not sure if there is a shorter expression :)). She had her birthday in May, too, and she attended the party, so I thought of adding her name to the cake, too…

I will update the post with the recipes  soon(God willing).

Hussein is Two!

On the first day of Eid-Ul-Adha, we took the opportunity of the family gathering celebrated Hussein’s second Birthday (which is actually on the 25th of November…). The best part for him, of course, was opening and exploring his presents: Mainly all sorts of cars to satisfy his madness about cars!

And mentioning cars, I made a special two-shaped car race cake for him which small cars on top (I actually used some of his toys..). I got the idea from the internet and made some changes. The cake was a chocolate cake which everybody loved.

Here are the recipes:

For the chocolate cake I used:

350 g butter

350 g caster sugar

225 g flour

100g cocoa powder

25 g milk powder

2 Tablespoons baking powder

1 teaspoon vanilla

6 eggs

I just blend all ingredients together and put into the oven for about 40 minutes.

I used two round pans, removed a little part from each and sticked them together using melted chocolate to get the above shape.

For the topping I used:

melted chocolate to cover the whole cake and stick the topping

green-tinted coconut for the grass (I put some coconut into a plastic zip-lock bag, melted some food color powder in some water, added into the bag and rubbed with my hands around the bag until all coconut turned green),

for the street I mixed some cocoa powder with water and blue color to get the black color

Some white chocolate strips for the white strips on the street

some sweets for decoration.

For the ”Happy Birthday” card, I used two halves of a straw to anchor the white card which I wrote on.
